Instructions

  • Add all ingredients to the food processor and pulse until blended.
  • Consistency should allow mixture to be able to roll into balls. If too crumbly return to food processor and pulse with 1/4 tsp of water.
  • Place balls in a single layer and store in the freezer.

Ingredients

  • 2 cans light coconut milk
  • 6 tbs honey
  • 2 whole limes juice and zest

Instructions

  • Add coconut milk and honey to the blender.
  • Add juice and zest of two limes.
  • Blend until well combined but not too foamy.
  • Pour mixture into popsicle molds. Freeze for about 3 hours until soild and enjoy!

Notes

This recipe makes enough (with a little extra) for these silicone molds which make 10 pops.  I saved a little extra zest to sprinkle after removing them from the molds.

Vegan Peanut Butter Cookies

With just 3 main ingredients these peanut butter cookies are super simple to throw together. And being egg-less makes dough eating fair game which is a plus in our household!

Ingredients

  • 1 cup creamy peanut butter
  • 4 tbs Manitoba Milled Flaxseed
  • 1/3 cup maple syrup
  • 3 tbs water
  • 2 tbs granulated sugar for sprinkling
  • 1 tsp salt optional

Instructions

  • Preheat the oven to 375 degrees
  • In a small dish mix the milled flaxseed with 3 tablespoons of water and stir until combined. Set aside.
  • To the bowl, add peanut butter, maple syrup, flaxseed, salt and stir to combine.
  • The dough will be sticky but you should be able roll in small 3/4 in balls. If needed add a sprinkle of the milled flaxseed.
  • Place the cookie balls on to a baking sheet lined with parchment or slicone baking sheet. Sprinkle with granulated sugar and flatten with a fork to make the crosshatch marks.
  • Bake in the preheated oven at 375 degrees for 12-14 minutes.

Peanut Butter Banana Nice Cream

A simple, great tasting, and good-for-you summer treat! Nice Cream starts with blending frozen bananas in a food processor and can take on endless flavor combinations after that. My personal favorite it this banana, peanut butter, and chocolate combo!

Ingredients

  • 4 frozen bananas
  • 2 tbsp chunky peanut butter
  • 2 tbsp dark chocolate chips
  • 1 tbsp milk

Instructions

  • Break the frozen bananas into quarters and place into the food processor.
  • Blend until smooth stopping to scrape down the sides as needed.
  • Once almost smooth add the peanut butter and blend until smooth.
  • Add chocolate chips and pulse until combined.
