Coconut Lime Popsicles

Equipment

  • blender
  • Popsicle molds

Ingredients

  • 2 cans light coconut milk
  • 6 tbs honey
  • 2 whole limes juice and zest

Instructions

  • Add coconut milk and honey to the blender.
  • Add juice and zest of two limes.
  • Blend until well combined but not too foamy.
  • Pour mixture into popsicle molds. Freeze for about 3 hours until soild and enjoy!

Notes

This recipe makes enough (with a little extra) for these silicone molds which make 10 pops.  I saved a little extra zest to sprinkle after removing them from the molds.
