Cashew Date Cookie Balls
- food processor
- 1.5 cup cashews
- 6 oz pitted dates
- .5 tsp coarse kosher salt
- 2 tsp vanilla bean paste
- Add all ingredients to the food processor and pulse until blended.
- Consistency should allow mixture to be able to roll into balls. If too crumbly return to food processor and pulse with 1/4 tsp of water.
- Place balls in a single layer and store in the freezer.
