Sheet Pan Salmon and Asparagus

Sheet pan salmon and asparagus is a quick and healthy weeknight meal. Start to finish this is done in 25 minutes or less and some weeknights you just need that!  Switch up the sauce and side to add variety – I like to prepare the salmon with either pesto or baked with slices of fresh lemon.  The sides vary depending on what we have around, often quinoa, whole wheat pasta or RightRice.

Ingredients

2 salmon fillets- approximately 5 – 6 oz each

2/3 pound fresh asparagus

2 tablespoons olive oil

salt and pepper to taste

Instructions

Preheat oven to 425 degrees

Cut off or shave rough ends of the asparagus

Drizzle asparagus with olive oil and toss to cover

Sprinkle salt and pepper to taste

Bake in preheated oven for 12 minutes
